
I am so excited to be celebrating my sweet, precious friend Jenny today. You guys know Jenny from her blog Picky Palate where she posts her fun and creative kitchen creations — from outrageously decadent and dreamy desserts to simple, family-friendly weeknight dinners. She’s also got a cookbook coming out this fall with even more of her amazing recipes! Jenny is the sweetest, kindest, happiest person I know. She is a true inspiration to me, and I’m so honored to call her a friend. Jenny is expecting a new baby boy any day now, and we couldn’t be happier for this sweet, glowing mama! Today a few of us got together to throw her a “virtual surprise baby shower” and celebrate Jenny and her new bundle of joy. Happy Baby Shower Day, Jenny!! We love you girl!! xoxo
So let me tell you about these cookies! You know how Delta serves Biscoff cookies on their flights? That’s the best part about flying Delta, right?! :) A few weeks ago on a US Airways flight, I was served blueberry cookies. They were very similar to Biscoff cookies, but they tasted like a blueberry muffin! I was immediately obsessed with them, and had to come straight home and make blueberry cookies. I am SO in love with the blueberry, cinnamon, and Biscoff combination in these cookies! And of course, the best part is that you can eat them for breakfast! I mean, they’re basically like a blueberry muffin. In a cookie. :)

We’ve got your basic cookie ingredients here: flour, baking soda, salt, butter, eggs, vanilla, sugar and brown sugar, along with our fabulous extra ingredients that make these cookies shine: dried blueberries, Biscoff spread, cinnamon, and white chocolate chips.

Oh, glorious Biscoff! If you’ve never had Biscoff, I would highly recommend seeking it out! My grocery store carries Biscoff right next to the regular peanut butter. It even comes in a creamy and crunchy variety, just like peanut butter. It also goes by the name Cookie Butter at Trader Joe’s or Speculoos Spread is its generic name if you see that anywhere. It’s got the consistency of peanut butter, but it tastes like sweet, cinnamony graham crackers. Total. Heaven. I am a huge fan of peanut butter, and you know I love all things sweet, so this is totally right up my alley. If you like toasted peanut butter and jelly sandwiches, try making one with Biscoff! The warm gooey biscoff, with the crunchy bread, and the sweet jam.. Oh my gosh. But let’s get back to these cookies.

Add 1/2 cup each of white sugar and brown sugar to a bowl, along with 1 stick of butter and and 1 cup of Biscoff.

I am a firm believer that there is seriously nothing better than butter and brown sugar.

Beat on medium speed for 3 minutes until well combined, then add 1 egg and 1 tablespoon of vanilla, and beat for 2 more minutes.

Meanwhile combine 1 3/4 cups flour, and 1/2 teaspoon each of salt, baking soda, and cinnamon. Whisk it all together to combine. Add to wet ingredients and beat on low speed until just combined.

Now it’s time for the good stuff! Add in 1 cup of white chocolate chips…

And one cup of dried blueberries. Stir until just combined.

Scoop onto a cookie sheet and bake at 350 for 10 minutes.

These are soft, chewy, dreamy, and delicious. Hope you enjoy!! :)
Cinnamon Blueberry Biscoff Breakfast Cookies
1/2 cup (1 stick) butter, softened
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1 cup Biscoff Spread
1 large egg
1 tablespoon vanilla extract
1 3/4 cups (210 grams) all purpose flour
1/2 teaspoon salt
1/2 tsp cinnamon
1/2 teaspoon baking soda
1 cup white chocolate chips
1 cup dried blueberries
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1 cup Biscoff Spread
1 large egg
1 tablespoon vanilla extract
1 3/4 cups (210 grams) all purpose flour
1/2 teaspoon salt
1/2 tsp cinnamon
1/2 teaspoon baking soda
1 cup white chocolate chips
1 cup dried blueberries
1. Add butter, sugars, and Biscoff to a large bowl. Beat on medium speed for 3 minutes. Add egg and vanilla, and continue to beat for 2 more minutes until well combined.
2. Whisk together flour, salt, cinnamon and baking soda and add to wet ingredients. Beat on low speed until just combined. Add white chocolate and blueberries and stir until just combined.
3. Bake at 350 degrees F for 10 minutes.
