HOW TO COOK
Lamb to wash, to clean, cut the tendon, making small incisions that during frying them is not contracted, and cut one piece (250 g) per serving. Kidneys also wash and cut in half. Fold the meat and kidneys in a bowl, season with salt and pepper, sprinkle with finely chopped onions and parsley, sprinkle with vinegar or lemon juice and put it on 2-3 hours to marinate.
Before frying each piece of lamb put on a skewer, adding both sides of a piece at half the kidney. Fry over the coals without an open flame. Ready kebab skewers and remove the file in one piece with the kidneys, putting on a plate slice of lemon.Skewers on top sprinkle with green onions and parsley.

1 head of onion
100 grams of green onions and parsley
