Oh my gosh, I am so excited to share these Soft Batch Peanut Butter Double Fudge Brownie Cookies with you today! These are the softest, most decadent double chocolate cookies I have ever had. I am in love! And since they use a boxed brownie mix, they are SO easy to make. If you’ve never had a brownie cookie before, just take a look at the photos below. You are in for a treat!! :)

Seriously cannot get over how rich, fudgy, and decadent these cookies are. They are perfect when warm and fresh out of the oven! But they’re still soft and fabulous the next day too.
And you’ll definitely want to top with a scoop of ice cream to make a brownie cookie sundae!! :)
All you need to make these is 1 box of brownie mix, 2 eggs, flour, butter, and water. Plus your favorite mix-ins of choice: I chose Reese’s Mini Pieces Baking Chips and Hershey’s Milk Chocolate Baking Melts.
I love the mini Reese’s Pieces for baking (I can usually find them on the baking aisle or the candy aisle) but you can also use regular sized Reese’s Pieces, or chocolate chips, peanut butter chips, butterscotch chips, M&Ms, caramel bits, nuts, anything you want! :)
Start by melting the butter… And since I was melting it I went ahead and browned it too! You can never go wrong with browned butter, especially in brownies! :) To make browned butter, just melt the butter over medium heat until it starts to foam, then whisk constantly until it starts to turn brown and becomes very fragrant. Then immediately remove from heat and pour into the bowl of your mixer.
While the butter is cooling a bit, I went ahead and gave the baking melts a rough chop. I LOVE using baking melts in cookies, especially when they’re chopped a bit. It makes the cookies so gooey and chocolaty! Even on the next day, the chocolate stays so soft, so when you bite into the cookie, it looks like it’s fresh out of the oven.
Then you just combine everything, scoop onto a cookie sheet, and 10 minutes later, you have these beauties.
Be sure and have a tall glass of milk on hand! You are going to want some with these cookies. :)

Soft Batch Peanut Butter Double Fudge Brownie Cookies
1/4 cup butter, melted
1/4 cup water
2 Large Eggs, beaten
1 (18 oz) box Fudge Brownie Mix
1 cup All Purpose Flour
1/2 cup Reese’s Mini Pieces Baking Chips (or regular Reese’s Pieces)
1/2 cup Hershey’s Milk Chocolate Baking Melts, roughly chopped (or regular chocolate chips)
1. Preheat oven to 350 degrees F.
2. In a medium bowl, beat butter, water, eggs, brownie mix and flour until just combined. Stir in Reese’s Pieces and chocolate baking melts or chips.
3. Use a medium (1.5 tbsp) cookie scoop to place dough on a cookie sheet lined with parchment paper. Bake at 350 for 10 minutes. Cool on a wire rack.
