HOW TO COOK
This chicken, baked whole and stuffed with herbs on a platter with endive.
Wash all the herbs and carefully dry them with a towel. Connect all the herbs together and finely chop them. Cut the chicken heart and liver and mix well with their herbs. Season with salt and pepper. Carefully spread the mixture under the skin of the chicken.
Fry the chicken on both sides until brown in color. Add the garlic cloves. Cover and leave for 20 minutes.
Meanwhile, cut the tops envidiya into four parts, mix with half a teaspoon of sugar, mix well and sprinkle the mixture around the chicken carcass for 10 minutes before end of cooking time.
